The Vietnamese noodle bowl is built in layers. Soft rice vermicelli goes down first, then shredded lettuce, cucumber, bean sprouts, pickled carrot and fresh herbs, then the protein, then a sliced spring roll on top for crunch. The dressing is poured over just before eating.
It is the lightest way to eat at Szechuan Kitchen: fresh rather than saucy, satisfying without sitting heavily, and easy to carry back to a desk, a dorm or a table in Nutana. Because so much of the bowl is raw vegetables and herbs, the quality of the prep shows in every mouthful.
