Thick, chewy wheat noodles tossed in a screaming-hot wok with shredded vegetables and a dark, savoury soy sauce. Shanghai noodles are one of the most ordered plates at Szechuan Kitchen and a Broadway Avenue comfort-food staple.
Shanghai noodles are thicker and chewier than chow mein — closer to udon in bite — which is exactly why they hold up so well to a hot wok. We stir-fry them with cabbage, onion, carrot and green onion in a dark soy sauce that coats each strand without turning the dish heavy.
Because the noodles are cooked to order, they arrive with the faint smoky character that only high heat produces. Add chicken, beef, pork or shrimp, or keep them vegetarian — the noodles are the star either way.
Shanghai noodles are the plate most often added to a shared order at our Saskatoon dining room, and the reasons are simple.

No. As we cook them they are savoury and mild, which makes them a safe choice for children. Ask for chilli on the side if you would like heat.
