Ginger beef lives or dies on texture. We cut the beef into fine strips, coat them in a light batter and fry them hot and fast so the outside crisps before the inside dries out. The sauce goes in at the very last second in the wok — enough to glaze every strip, never enough to make them soggy.

It is mild to medium. There is warmth from fresh ginger and a little chilli, but it is sweet and tangy rather than hot. Ask us to add more chilli if you like it spicier.
Serve it as soon as it arrives, and leave the lid slightly open on the drive home so steam can escape. If you are reheating leftovers, a few minutes in a hot oven or air fryer brings the crunch back far better than a microwave.
